Abstract

This scientific initiation project aims to semi-synthesize a betalaine-nitrone (NO-pBeet) and to study its antioxidant capacity as a function of pH. NO-pBeet was recently obtained in our group and is more stable than its corresponding iminic betalain. Its structure does not present the phenolic portion present in most antioxidants; however, the polymetallic system which gives the betalains the ability to break the radical chain is observed. In this way, this study contributes to the understanding of the relationship between the betalain structure and its antioxidant capacity, as well as to the possible development of new antioxidant additives for application.
