Abstract

Fish production in Brazil is increasing every year but remains below the level suggested by the World Health Organization (WHO), which reveals that the Brazilian consumes less than the estimated for the benefit of his health, reinforcing the importance of fish consumption, given its nutritional richness. The fatty acids (FA) of the n3 series (for example EPA and DHA), are present in fish and are part of a series of practices that may aid in the prevention of various diseases such as attention deficit hyperactivity disorder (ADHD), depression, schizophrenia, multiple cases in carcinogenesis, and the main substrates mobilized from mother to child, providing a better neural and visual development of the child. Considering the benefits of fish consumption, there are the factors that raise the question: what is the levels and types of the FA of n3 series in commercial interest fish groups commercialized in Brazil. Given the importance of fatty acids in human nutrition, this work aims to quantify the lipids and characterize the FA nutrient of commercial species of interest in Brazil and mainly in São Paulo state.
