Abstract

Little is known about the phenotypic characteristics and physical-chemical properties caused by the different genotypes in milk. The scientific community still does not fully agree on the benefits of A2 milk consumption, compared to A1. The present project aims to identify possible genotypic and phenotypic effects in cows with alleles A1 and A2 of ²-casein. In addition, it intends to evaluate the physical-chemical, composition and somatic cell counts (CCS) of milk from cows with the A1A1, A1A2 and A2A2 genotypes. It is expected that there is a difference in the physical-chemical characteristics and milk composition of the different genotypes, which may alter the characteristics of industrial yield and shelf life, and that the phenotypic characteristics influence gene expression by selecting alleles that alter the quality of milk.
