Abstract

Among milk proteins, caseins are the majority, in which ²-casein is the largest participant. This protein can be presented in several variants, with A1 and A2 being the most common in a dairy herd. The casein micelles are made of ± and ²-casein in its interior and º-casein on the outside, as a protection. Enzyme action upon º-casein is able to separate its two subunits, giving rise to the glycomacropeptide. In addition to enzymatic milk coagulation by renin, used in industries, milk most found microorganisms as Bacillus cereus and Pseudomonas fluorescents produce enzymes that have proteolytic action upon º-casein. This present project aims to verify the action of microbial proteases on milk from animals with different genotypes (A1A1, A1A2, A2A2) by experimental contamination of these milks with Bacillus cereus and Pseudomonas fluorescents and the quantification of GMP in different periods and temperatures of incubation (AU)
