Abstract

The objective of this work will be to evaluate whether the inclusion of protected fat from ruminal degradation associated or not with cottonseed in the diet can influence the fatty acid profile and meat quality in Longissimus thoracic muscle of confined Nellore cattle. The study will be conducted in the experimental confinement of FMVZ, UNESP- Botucatu. Ninety-six (48) non-castrated Nellore male bovines, with an average age of 22 months, an average weight of 380 kg, will be used in a completely randomized experimental design, with two treatments with 6 replications and 4 animals/pen, totaling 24 animals/treatment. The treatments will be the inclusion of 5% protected fat and 0% cottonseed (T1) and the inclusion of 2% protected fat and 15% cottonseed (T2). The animals will be allocated, in covered confinement. Slaughter will take place 110 days after entering the feedlot. The data will be analyzed by the SAS PROC MIXED. If there is a need to compare means, the Tukey-Kramer and Duncan test will be used, considering significant effects values of P considered 0.05, and trends will be considered at P>0.05 to P d 0.10.(AU)
