Abstract

The goal of this study is to evaluate the levels of genes involved in the fatty acids synthesis, as well as, the levels of proteins involved in the proteolytic process during beef post mortem period of Nellore and crossbred F1 Galician Blond x Nellore, finished in feedlot. Contrasting the meat fatty acid profile these two genetic groups, and the shear force of the aged longissimus muscle. Are being used 16 Nellore bulls and 16 crossbred Galician Blond x Nellore bulls, with an average age of 11 months and 280 kg ± 15 kg of initial live weight. The animals are kept under the same management conditions and it receiving the same ad libitum diet, containing 70% concentrate and 30% forage in dry matter for finishing diet 1 and a 85:15 ratio for finishing diet 2, with corn silage and raw cane bagasse. At the end of experimental period of 120 days, the animals will be harvested and samples of longissimus muscle will be collected for the extraction of RNA and degradation of proteins. During deboning, longissimus muscle samples will be collected for the fatty acid profile analysis and shear force. Samples to shear force and protein degradation will be aging by zero, 7, 14 e 21 days. The genes evaluated will be: PPAR³, SREBP-1c, FABP4, ACC, FAS, SCD, MSTN, CAPN1, CAPN2 e CAST. It is expected that the genetic groups influence the levels of genes involved in lipid metabolism and the fatty acid profile of the beef, as well as a difference in protein expression. The results may suggest which genetic group would be healthier, as regards the profile of fatty acids for human health, besides a beef with better sensorial quality referring to the tenderness attribute.
