Abstract

Nowadays, beef is the second most consumed meat in the country. However, obtaining a quality product that meets the needs of an increasingly demanding consumer market is still a major challenge in the beef production chain. In this context, the insertion of breeds that can improve meat quality has been a strategy, in order to meet consumers' needs, with regard to meat quality, especially tenderness. Considering this scenario, Wagyu breed products have been standing out in the world market for presenting differentiated meat with characteristics that make it more valued. Nevertheless, there is an absence of studies with Wagyu animals raised in tropical conditions. Therefore, this study aims to analyze the physical and chemical attributes s of the meat from progenies of representative Wagyu Kuroge bulls bred in tropical conditions. A total of 40 progeny of bulls from different lines of the Wagyu Kuroge breed (Itozakura, 100% Tajima, Hiroshima, High % Tajima), male, castrated, and confined at the age of 16 months will be used. All animals were fed the same diet ad libitum. At the end of the experimental period, the animals were slaughtered. After, Longissimus thoracis muscle samples will be collected for histological analysis. During deboning, Longissimus thoracis muscle will be collected for analysis of Warner Bratzler Shear Force, marbling, color, total lipid quantification, and total, insoluble and thermo-soluble collagen analysis. It is expected to find a difference in the physical-chemical characteristics of the meat in progenies from different strains of the Wagyu Kuroge breed, finished under tropical conditions.(AU)
