Abstract

Salmonella spp. is one of the most worrisome pathogens in the food industry since it can cause economic losses and health problems for consumers. Recently, several outbreaks of this pathogen have been observed in foods with low water activity. It is related to the resistance created by the exposure of the microorganism to sub-lethal conditions, typical of dry products. Usually, contaminations are associated with inadequate cleaning and sanitization processes, resulting in biofilms. The current project proposes to evaluate the effectiveness of different dry sanitizers on Salmonella dry adhered to stainless steel and polypropylene surfaces. The results of the study may help regulatory agencies and the food industry in the establishment and/or optimization of dry sanitation methods to control and prevent Salmonella contamination in manufactory plants of low moisture foods.
