Abstract

Although considered an important tool for the industrialization of food, the use of additives raises questions, especially when it comes to their consumption by children. Therefore, the study on the exposure of the infant population to food additives through the diet is essential to assess and characterize potential health risks. In the present work, food consumption data obtained through the 24-hour recall method applied to 90 children aged between 1 and 3 years in the city of Campinas-SP will be used in order to evaluate the intake of food additives by this population and characterize potential health risks. The calculations will be performed using a deterministic approach and the maximum permitted limits of additives according to current legislation. The estimated intake values will be compared to the Acceptable Daily Intake (ADI) of the substances, for risk characterization purposes. The present project seeks to understand whether there is a health risk to the studied population regarding the intake of food additives through the diet, encouraging the realization of more refined studies on the use of these substances.
