Abstract

Milk analysis is essential so that the product, used both for direct consumption and for dairy production, is in good quality. Several contaminants may be present in milk, from antibiotic residues to antioxidants from the metabolism of the food-producing animal. However, the analysis of a complex matrix such as milk requires many pre-preparation steps, in addition to the use of expensive and time-consuming techniques, such as chromatographic or spectrophotometric methods. Thus, the development of microsensors (microelectrodes) that do not depend on a calibration curve for the determination of chemical species (antioxidants and antibiotic residues) in commercial milk samples is proposed in this doctoral project. Once the methodology has been validated, reproducible microsensors will be produced for use in the field, reducing operating costs and maximizing the decision-making process to verify that the product meets the required specifications. Thus, the proposal contributes to sustainable chemistry and seeks to develop faster methods. (AU)
