Abstract

The Lentinula edodes mushroom has attracted the attention of several researchers due to its nutritional and medicinal properties. Shiitake grows in lignin-rich materials and can be grown on sawdust, with wheat, rice and/or corn bran added to correct the C/N ratio. This culture is called "axenic", because the substrate is sterilized and inoculated in a laminar flow chamber. In addition to the C/N ratio, another concern regarding substrate production is the pH value and calcium supply. In this sense, calcium carbonate (CaCo3) is applied to raise the pH, keeping the substrate selective to shiitake and reducing the possibility of contamination by Thricoderma. Agricultural gypsum (CaSO4) provides calcium and sulfur, in addition to modifying the physical characteristics of the substrate, making it more aerated and porous. With this, it is intended to elucidate in this project the agronomic behavior of the shiitake mushroom (Lentinula edodes) cultivated with different doses of carbonate and gypsum. For this, 3 doses of carbonate (0, 1 and 2%) and 3 doses of gypsum (0, 2.5 and 5%) will be used, which will total 9 treatments. Two experiments will be carried out, each with a strain (LED 02/19 and LED 01/22). Productivity, biological efficiency, average mass and number of mushrooms, precocity, time to first flow, production rate, as well as pH, electrical conductivity (EC), humidity and C/N ratio of the substrates will be evaluated. The results will be submitted to analysis of variance and regression, under the level of 5% of significance.
