Abstract

The standardization of substrate production for mushroom cultivation in Brazil is a major challenge faced by fungiculture, mainly due to the great diversity of raw materials available in each region and the possibility of applying different methods of substrate preparation, involving chemical, physical and biological processes. The ideal substrate is one produced at a low cost, nutritionally balanced for the development and fruiting of the mushroom, physically adequate, allowing gas exchange and the formation of the mycelial browing, and biologically free of contaminants that could damage mushroom production. In this sense, the present project aims to standardize the methods of substrate production for the cultivation of Lentinula edodes. 6 different raw materials will be used, these being Brachiaria brizantha, Brachiaria decumbens, sugarcane bagasse, wheat straw, rice straw and sawdust, which were the object of a previous study and presented a high quality standard (FAPESP Process No. 2020/13230-8). All these substrates will be fermented (period of 5 days) or not and pasteurized (72 hours at 65°C) or sterilized (4 hours at 121°C). Two particle sizes (particles of 5 mm up to 15 mm) will be used. The substrates will be inoculated with two genetic strains, to obtain more accurate results. The chemical, physical and biological characteristics of the substrates, the agronomic behavior of L. edodes, the quality of the mushrooms and the production cost of the proposed systems will be evaluated.
