Abstract

The fungus with the scientific name Pleurotus ostreatus, popularly known as Shimeji, is an edible mushroom that can be cultivated in varieties of agro-industrial residues that single out lignin and cellulose, due to its enzymatic complex that degrades components introducing them for its development. Thus, the substrate for cultivating P. ostreatus may vary depending on the availability of materials, residues and climate in the region. However, there is no literature addressing the use of filter cake, sugarcane residue for the cultivation of P. ostreatus. This residue is normally used as fertilizer for the sugarcane culture itself, but it can cause pollution and contaminate water courses if disposed of incorrectly, due to the large mass of heavy metals found in its composition. In view of this, the use of filter cake as an alternative substrate in the production of P. ostreatus, brings the reuse of this residue, contributing to ecological and sustainable factors, in addition to generating a food product with added value, serving as an innovation and source of income. Therefore, the present project has the purpose of carrying out a study to evaluate the viability of the filter cake in the production of the mushroom P. ostreatus in different proportions, considering evaluation criteria such as the mass of the fresh basidiome, number of clusters, chemical characterization of the substrates and raw material and the biological efficiency of each treatment.
