Abstract

Due to the country's political strategy to lead the world in the production, use and commercialization of biofuels, it is expected that there will be an exponential growth in production in the coming years. This project intends to apply the olfactory profile to determine the stability during biodiesel storage with the application of a natural antioxidant. Oxidative stability is a quality parameter that affects the storage of this biofuel. The natural antioxidant to be used will come from an agro-industry residue, in this case, the grape pomace. The electronic nose will be used as an alternative measurement instrument for determining oxidative rancidity, an important parameter for assessing the quality of storage of this biofuel. This property must also be determined in the Rancimat equipment. This research is part of a larger project, financed by FAPESP (Proc. No 2022/07545-1) in which it will produce biodiesel from different samples of oil and residual fat (OGR) from frying foods, which will be correlated with the quality indicators of this biofuel. All the research will allow the optimization of the biodiesel production and storage process, with a considerable reduction in the analysis time and without the need to use sophisticated and expensive equipment.
