Abstract

Introduction: Healthy eating is not restricted to nutritional aspects, it also considers cultural, social, economic and political aspects. The way we produce food has mainly negatively impacted the environment. natural resources, such as soil, water, atmosphere. A balanced diet should be beneficial for the health of people and the planet. Quantifying estimates of environmental impact indicators determined from land use, greenhouse gas emissions, eutrophication and the use of fresh water are one of the ways to assess the sustainability of the diet. Objectives: Validate the sustainability of the meal quality index based on the evaluation of photographic records of meals (IQR-photo). Methods: Secondary data from the ClicPrato project will be used, which evaluates the quality of the meal through photographic records of lunch and/or dinner through 9 components created by specialists in the area and based on national and international recommendations in the context of healthy eating. Thus, 90 participants sent photos of their meals and recorded the food and the respective amounts. The quantification of environmental impact indicators (land use, greenhouse gas emissions, eutrophication and the use of fresh water) of consumed food will be carried out using World Wide Fund for Nature -WWF databases. Method of data analysis: For the statistical analysis of the data, the STATA® program (version 14.0; College Station, Texas, USA) will be used and the significance level considered to be 5%. Initially, the score obtained in the IQR - photo will be compared with the environmental impact indicators using Spearman's correlation. In addition, it will use Bland and Altman analysis and Kappa statistics to assess the agreement between the IQR photo and environmental impact indicators, considering the tertiles of the values.
