Abstract

Quality of roasted and ground coffee for consumption is essential to ensure food safety for consumers. Given the recent scenario of fraud in this product, this project aims to propose a fast and reliable analytical method for the detection and quantification of impurities in samples of roasted and ground coffee for consumption. In this context, the use of portable Reflectance Spectrometry in the Visible and Near Infrared (Vis-NIR) regions will be a differential of this approach due to the attractive characteristics of this method, such as fast analysis (a few seconds per determination), non-destructive nature and the possibility of performing tests on site. In addition, the combined use of chemometric tools, such as PCA, SIMCA and PLS-DA can contribute substantially to the treatment of analytical data containing a large number of variables, becoming a pioneering initiative for the qualitative and quantitative determination of impurities in this product. It is expected that the analytical methods developed and validated in this research project will contribute to increasing efficiency in the inspection of roasted and ground coffee for human consumption.
