Abstract

Several plant species are cultivated in Brazil; however, some are still underutilized due to low availability or lack of awareness regarding their nutritional potential. Among these, Non-Conventional Food Plants (PANC) stand out as promising, nutritious, and sustainable alternatives for the development of new food products. Ora-pro-nóbis, an important PANC, isa remarkable example. Its leaves are rich in essential nutrients and contribute significantly to a balanced diet. In this context, the main objective of this project is to produce edible leathers from ora-pro-nóbis purée combined with carrageenan gum, using the tape-casting technique. The food leathers will be characterized based on visual evaluation, thickness, proximate composition, color parameters, antioxidant activity (ABTS¿+ e FRAP), and 180-day stability, focusing on moisture content, total phenolic compounds, and changes in color parameters. Additionally, sensory analysis will be carried out to verify consumer acceptance of the product,considering attributes such as appearance, aroma, flavor, texture, overall acceptance and purchase intention. This project aims not only to highlight the value of a native plant with high functional potential but also to offer the market an innovative, healthy, and sustainable alternative. The development of a plant-based product with both nutritional and sensory appeal meets the growing demand for foods that promote well-being and environmental responsibility, while also contributing to dietary diversification and the strengthening of Brazil's bioeconomy.
