Abstract

With the increase of the consumption of the milk fermented in the last times, objective to investigate the cariogenic potential of sweetened milk fermented skimmed commercialized in Brazil through the analysis of its properties physicist-chemistries, of its effect in the demineralization in situ of bovine enamel and measurement of the acidogenic of biofilm in situ after the exposition to fermented milk. Three bottles of different lots of in the maximum five sweetened fermented milk will be acquired skimmed. To determine pH of the products 2A09E - Analyser, connected to an analyzer of íons will be used the electrode of pH 720-A+ (ORION). Of each bottle of the products each one will be removed 2 samples contends 1 mL to analyze the concentration of ion fluorine and the ion calcium. The determination of the concentration of carbohydrate in the samples will be carried through in duplicate and by the association of two techniques. The experimental delineation foresees a blind study of the crossed type in situ in three experimental phases of 14 days each, with interval of 7 days between them. Twelve volunteers will be divided in 3 groups and will use a palatal device for each one of the three experimental phases in which the enamel blocks will be submitted the 3 groups of treatment. In such a way that to the end of the three phases all the volunteers have used 3 palatines devices and have carried through the 3 foreseen treatments. Passed the experimental time will be carried through the analyses of superficial microhardness (final SMH).
