Abstract

Rutin is an important bioflavonoids known for their antiallergic properties, anti-inflammatory, antimicrobial, normalizes the resistance and permeability of the wall of capillary vessels in addition to antioxidant properties. However, its low solubility in water is a barrier to its use and marketing, primarily for the pharmaceutical area. In the experimental part, will be held on microencapsulation of rutin, obtained from fava-d'anta, a flavonoid widely used in industry with several pharmacological properties, such as increased vascular permeability, hypolipidemic action, decrease blood glucose and anti-oxidant properties. The choice of rutin is because of that comes from a species of wide occurrence in regions of Brazilian' Cerrado and Caatinga, biomes considered with a high degree of extinction of its species, therefore, can justify the use of the plant as a source of flavonoid in studies of dosmetication. This work will aim rutin's microencapsulation by the methods of molecular inclusion with ²-cyclodextrin, and coacervation using biopolymers as the Acacia gum and gelatin. A comparison between the rutin encapsulated by these two methods and rutin not encapsulated will be performed to evaluate the improvement in water solubility and study its stability for a period of 60 days (samples every 10 days), before exposure to light, at 700 lux, and temperature and humidity controlled (45 ° C and 75% ERH). The determination of the content of rutin awill be made by spectrophotometry in the UV-Vis at 398 nm.
