Abstract

Milk and dairy products owing to high nutritional value and the benefits provided by them, are widely consumed by the population. However they are important vehicles which can carry pathogenic microorganisms into the organism and cause foodborne illness; one of these important pathogens is Bacillus cereus. Dried milk, one of the most important dairy products is commonly consumed by children and elderly and can carry many pathogenic microorganisms. Therefore, it was idealized this study that aims to evaluate the presence and population of Bacillus cereus in samples of different dried milk packing and diverse establishments from Ribeirão Preto, São Paulo. The objectives also include the evaluation of the conformity of the products with the public health regulations.
