Abstract

Debranching enzyme (DBE) are indispensable to break α(1-6) bounds of starch. One DBE type-isoamylase was detected during banana ripening, which showed higher affinity for β-dextrin limit, followed for glycogen, with subunit size of 80 kDa. The sequencing of the part gene of the enzyme showed high homology with isoamylase of others vegetables, confirming its identify. Isoamylase of banana showed constant activity, transcription and expression during ripening. When banana samples were treated with 10 ppm of ethylene was observed a decrease in transcript level, but without changes in activity and amount protein profile, sugaring that isoamylase of banana is not regulated for ethylene.
