Tropical fruit peels as a source of antioxidant for ready juice enrichment

Abstract

Food ready for consumption meet the modern lifestyle where the number of people seeking for convenience and food safety is increasingly growing. In this segment, ready juice has a guaranteed place in the market, with a tendency to expansion. In order to offer the consumer a food with earned value, we tested the use of extracts of wastes (peels) of Moriche Palm (Mauritia flexuosa Lf), Pomegranate (Punica granatum L.), Apple (Malus communis Lamk.) and Grapes (Vitis vinifera L.) in the enrichment of commercial ready juice. Physical and chemical analysis of the peel extracts were carried out: centesimal composition, antinutritional factors, minerals, total phenolic compounds, antioxidant activity determination by the methods of reducing the free radicals DPPH (2,2-Diphenyl-1-Picrylhydrazyl) and ABTS (2,2\'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid), flavonoids and vitamin C in the type of peel with the highest antioxidant activity (pomegranate), which was used for enrichment of commercial ready juice. Oxidative stability analysis was performed in the juice enriched in different concentrations. Other physical and chemical analyses were also performed in the enriched juice, such as pH, total soluble solids (ºBrix), titratable acidity and color. From this study, it was found that the pomegranate peel has a high yield, high amount of phenolic compounds and phytic acid, as well as antioxidant power, assessed by DPPH and ABTS. The sensorial evaluation showed no difference between control and enriched juice. The valueearned product is well accepted and feasible from a technological standpoint. (AU)
