Abstract

The chlorophyll fluorescence (Ex/Em: 411/667 nm) of organic, non-transgenic, and cold-extracted soybean oils was analyzed to evaluate the photosensitized oxidation. A strong negative correlation (r >=-0.94) was recorded between emission intensity and lipid oxidation indicators. (AU)
