Fungi and mycotoxins in foods: increasing the development of this area in Brazil by international partnerships

Abstract

Dr John Pitt is one of greatest authority in the area of fungi and mycotoxins in foods. The objectives of this visit are: i) to take part in the following project on: "Drought stress in peanut pre-harvest: influence on bioactive compounds, fungal infection, aflatoxin production and application of a predictive model for aflatoxin"; and "Cassava (Manihot esculenta Crantz): mycobiota, aflatoxin presence and effect of cooking on aflatoxin reduction" ii) to gice lecture at the master course of the Food Technology Institute (ITAL) on "Fungi and Mycotoxins in Foods"; besides that he will visit peanuts and cassava cooperatives and producers in order to colaborate on the understanding on critical factors involved on contamination by toxigenic fungi and mycotoxins in these cultures and their products.
