Abstract

Industrialized food product labels that highlight positive issues such as reduced energy consumption, lower carbon footprint, with fruit added, free of additives to artificially flavored or colored, among others, can have a major impact on consumers' quality perception. Similarly, alert or warning labels such as high sugar products, among others, may negatively influence the consumption decision. The objectives of this study are to raise the necessary requirements to obtain environmental self-declared certification, develop sustainable jelly candies in versions with and without sugar, raise the costs involved and, create two front labels, one positive and one alert. To create a positive label to communicate that the product is sustainable (with lower carbon footprint), free of additives and that contains fruit in its composition. To create a warning label, to inform that it also has high sugar content (FOP-Front-of-pack). In addition, the effect of these labels will be evaluated through sensory analysis with Brazilian and German consumers. (AU)
