Abstract

The several streams of the present project are: 1) the basics of Food Science and Technology directed towards the production of novel structured foods or new functional ingredients; 2) the nutritional diagnostics, through antropometric and biochemical determinations as well as the assessment of food consuption; and 3) tentative intervention measures. Thus, the present project has the following objectives: 1. to produce foods that are of current use of the young population but with a much higher nutritional value, represented by the amount and quality of protein, iron fat, vitamins and fibres to produce an improvement in the nutritional standard of this population. 2. to assess the impact of the introduction of these modified foods in the nutritional status of a specific young population: children of the chreches maintained by São Paulo local authorities. 3. to assess the usefulness of the nutritional status assessment of this population using the software 'Virtual Nutri', and based on these results to improve the software itself. The food and ingredients to be developed include, expanded extruded products with higher contents of protein, iron and vitamins; comminuted products with less fat and cholesterol; microcapsules with iron sulfate that can be added to several food preparations both at the domestic and industrial level.
