Abstract

The mandatory fortification of wheat and corn flour with Fe and folic acid was an important achievement for the reduction of the prevalence of iron deficiency anemia in Brazil. However, as a background for the evaluation of the impact of this program the possibilities of Fe overload and its consequences should be evaluated and those factors that improve Fe bioavailability should be focused under another perspective. Diet components as phytates that lower the mineral bioavailability can be useful when iron overload is concerned. Some physiological alterations are result of Fe deficiency and Fe overload as well, and may affect lipid and bone metabolism and the gastrointestinal tract. The ingestion of fructans has been associated to local and sistemic positive effects in the mineral bioavailability and lipid metabolism. Assuming that the Fe and Ca nutriture should not be evaluated alone and that physiological and nutritional factors may interfere in their absorption, transport and storage the aim of this study is to evaluate the physiological consequences of different levels of Fe and Ca intake and the effects of their interactions with phytates and/or fructans in rats.
