Interaction between vitamin D3 supplementation in the diet and solar exposure on qualitative characteristics of beef

Abstract

The vitamin D3 supplementation in the diet of animals alter positively meat tenderness due to higher calcium absorption and deposition in the muscles. However, the efficiency of the supplementation may be influenced by the animal exposition to solar UV rays. The aim of this experiment is to evaluate the effect of interaction between vitamin D3 supplementation in the diets of beef cattle and exposure to UV rays on the natural meat tenderization process. Forty two castrated male Nelore cattle with average initial live weight of 435 kg and average age of 26 months will be fedlot for 40 days. There will be 6 treatments (7 animals per treatment), as follow: 1) SVCS (No vitamin D3 supplementation + With Shade - 80% uv filtration); 2) SVSS (No Vitamina D3 + No Shade); 3) D2CS (2x106UI dose of vitamina D3 for 2 consecutive days pre-slaughter + with Shade 80%); 4) D2SS (2x106UI dose of vitamina D3 for 2 consecutive days pre-slaughter + No Shade); 5) D8CS (2x106UI dose of vitamina D3 for 8 consecutive days pre-slaughter + with Shade 80%); and 6) D8SS (2x106UI dose of vitamina D3 for 8 consecutive days pre-slaughter + No Shade).The statistical analysis will consider a completely randomized design with factorial structure for the carcass variables, being 3 sets of vitamin D supplementation and 2 system of exposure to UV radiation. The following variables will be measured: live weight, hot carcass weight, cooled carcass weight, final pH, meat color, ribeye area, fat thickness, hot and cooled carcass yield, meat and plasma mineral concentration (calcium, magnesium, phosphorus, sodium and potassium) and plasma glucose concentration. The variables from tenderization process will consider a split-plot design, with supplementation and shade in the main factors days after slaughter being split factors. The hypothesis is that animlas under shade will be able to respond more effectively to vitamin D3 supplementation. (AU)
