Abstract
The ractopamine is a ²-adrenergic agonist that has been used with partitioning agent of energy in diets of pigs in the finishing phase. In this project will be analyzed the interactive effect of different levels of this component in the welfare of pigs during the pre-slaughter handling, and qualitatively and quantitatively assess the meat quality of pigs supplemented with different levels of ractopamine. 300 hybrids of the same genetic lineage, divided into groups of 100 animals, shall be subject to three treatments (without supplementation, supplementation of 5 and 10 ppm of ractopamine /pig /day). The animals will be subjected to a fast of 12 hours prior to transport. Before the loading of 50 pigs of each treatment will be chosen randomly, identified and transported to the slaughterhouse. Evaluations of behavior of animals during the pre-slaughter will be made through observations on up-loading, lairage and collection system. Will be measured body temperature for quantitative (absolute temperature) and qualitative assessments (standard heat). The physiological parameters for the stress (CPK, lactate and cortisol) will be measured by biochemical evaluations and meat quality assessments by physical and chemical (pH, color and loss exudation). It also will be measured: intramuscular fat, levels of excoriations of the skin, percentage of lean meat in the carcass and shear force. The experiment will be randomized blocks. The data obtained will be submitted to analysis of variance using the Statistica software, compared to the average Tukey test the level of 5% of significance. For the estimated correlation coefficients will be used the program Statistica 5.0. (AU)
