Functional properties of the oil extracted from seeds of fruit of Brazilian Cerrado

Abstract

The demand for vegetable oils with bioactive constituents has increased in recent years due to the presence of specific components, which characterize these oils as functional foods. Because it is a field of study relatively recently, there is a need for more research on vegetable oils that contain biologically active substances. This study will aim to characterize the oil extracted from seeds of fruits of Brazilian Cerrado in order to identify bioactive compounds for possible application of these essential oils in foods. We will analyze the oil extracted from seeds of araticum, bam, buriti, caja, jatobá, jenipap and pequi to know the fatty acid composition, tocopherols, phytosterols, carotenoids and phenolic compounds for the development of functional foods. Will also take place to determine the chemical composition of seeds (moisture, protein, ash, fatty matter, carbohydrates and fiber) and characterization of oils extracted. Os results will be submitted to analysis of variance and Tukey test for the medium to 5% using the ESTAT program version 2.0. (AU)
