Abstract

Betalains are non-toxic, water-soluble pigments that replace anthocyanins in a variety of plants, from beetroots to fluorescent flowers. This research project deals with the preparation and technological application of modified betalains. New antioxidants, biodegradable chiral ionic liquids and biocompatible pigments will be prepared from the reaction between betalamic acid, obtained from beetroots, and adequate amino acids and amines. Furthermore, we will investigate the role and occurrence of fluorescence in ornamental flowers. This research will be performed by means of experimental and theoretical approaches and is committed with the environment preservation. (AU)
