Performance, carcass and meat characteristics of lambs fed with glycerin derived from biodiesel production

Abstract

The study will be developed in the Ovine Section from the Department of Animal Science, College of Agricultural and Veterinarian Sciences, São Paulo State University, Jaboticabal, SP, Brazil. Thirty lie de France lambs, not castrated, with 15 kg of body weight will receive levels of 0, 10 and 20% of crude glycerin in the diets, in partial substitution to com, being the roughage sugarcane in natura variety IAC 86-2480, with roughage: concentrate ratio 50:50. The objectives are to evaluate the performance (dry matter intake, body weight gain and feed conversion), nutrients digestibility, nitrogen balance, the in vitro gas production, the urine formic acid concentration, measurements in the carcass, the quantitative parameters of the carcass (hot and cold carcass yield, biological yield and chilling loss) and of non-carcass components (weight and percentage) the meat qualitative (pH, temperature, color, water holding capacity, sarcomere length, cooking losses, shear force, water loss by defrosting, number of substances reactive to 2-thiobarbituric acid and sensory analysis), the centesimal composition (moisture, crude protein, fat and mineral matter),the fatty acid profile and cholesterol content of meat from Triceps brachii, Semimembranosus and Longissimus lumborum muscle, from early, intermediate and late developments, respectively. The experimental design will be completely randomized with three treatments and ten replicates, being the comparisons of the treatments by orthogonal contrasts with the assistance of the SAS statistical program (2003).
