Abstract

The aim of this study is to evaluate the temperature and exercise swimming effect on fish growth, pacu (Piaractus mesopotamicus). The specific objectives are: to evaluate the fish performance, to calculate the growth rate and changes in body morphometrics measurements; to evaluate the hypertrophy and hyperplasia of white and red muscle fibers; to evaluate carcass yield, chemistry composition and subcutaneous ventral fat tissue development. The experiment will be carried out in the Agência Paulista de Tecnologia dos Agronegócios, Pólo Alta Sorocabana, in Presidente Prudente, São Paulo state, Brazil. The fish will be cultivated in three water recirculation systems with six tank (0.5 m3) at 24, 28 and 32 C. Three tanks of each system will be with exercise, at the 27.5 cm/s water flow velocity. Fish will be weighed and measured in length at the beginning, 60th, 120th, 180th and 240th days of cultivation. Histological slides of muscle and subcutaneous ventral adipose tissue will be prepared and evaluated in microscope coupled in image analysis system. Will be calculated the diameter and density (fiber/mm²) at the beginning, 120th and 240th days. At the end of the experiment will be evaluated the morphometry (length, width, height and perimeter in different body positions), yield carcass and the fat concentration in the flesh. It will be calculated as percentage of body weight: carcass yield, head and viscera. The data will be analyzed in a randomized design, factorial scheme 2 x 3 (exercise x temperature), with 3 repetitions (fiberglass tanks). (AU)
