Abstract

With the requirements established by Normative Instruction 51, September 18, 2002 and Normative Instruction 62, December 29, 2011, as use of the cooling system of milk on farms, collection and bulk transport promoted the reduction of mesophilic microorganisms responsible by acidification of milk, however these factors associated with poor management practices, use of poor quality water and cooling milk for prolonged periods and at refrigeration temperatures above the recommended limit, promotes psychrotrophic with predominance of Pseudomonas spp. which has been shown in several reports on deteriorating its high milk products due to their ability to produce heat resistant enzymes such as proteases and lipases that result in decrease in the yield of dairy products, appearance of unpleasant tastes and odors and decreased shelf life of milk and derivatives. Thus conceived up this study with the objectives to evaluate the microbiological quality of raw milk refrigerated type B in the expansion tank individual, obtained by manual and mechanical milking, during periods of rain and drought, by counting of mesophilic (BRASIL, 2011 ) and psychrotrophic, and also carry, for obtaining and storing milk, isolation and enumeration of Pseudomonas spp. and evaluating their ability lipolytic, proteolytic and subsequently perform verification of genetic identity by analyzing the restriction fragment polymorphism (AFLP), strains of Pseudomonas spp. isolated during the process of obtaining and storing the raw milk type B.
