Utilization of antimicrobial agents to control the contamination by Dekkera bruxellensis and Lactobacillus spp. in the ethanolic fermentation

Abstract

In the wine industry, some antimicrobials have been utilized to control populations of undesirable yeasts, especially non-Saccharomyces, such as sulfite, chitosan and dimethyl dicarbonate. Among non-Saccharomyces yeasts, the genus Dekkera/Brettanomyces have been considered as the main contaminant of the ethanolic fermentation, displaying a remarkable capacity of growth and adaptation to substrates. The sulfite salts have been used as preservatives to obtain wines of high quality; however they were not tested in the ethanolic fermentation yet. Preliminary results demonstrated at 250 mg/L, the potassium metabisulfite (PMB) was able to control the growth of the contaminant yeast D. bruxellensis without affecting considerably Saccharomyces cerevisiae, however there was a decrease in the fermentation yield. Less damage was observed when PMB was added to the fermentation medium instead to the acid solution in which the cells are treated between the fermentative cycles. In view of the results obtained and to continue with the research line in development for 10 years concerning the contaminants of the ethanolic fermentation, the aim of this project is to evaluate the effect of antimicrobials over the yeast Dekkera bruxellensis and bacteria Lactobacillus spp. The studies with potassium metabisulfite will continue and now proposing also chitosan and dimethyl dicarbonate, which have been successful to decrease the contamination by bacteria and undesirable yeasts in wine. Moreover, this project also aims to evaluate in which step of the fermentation process the antimicrobial may be utilized, in order to have a minimum effect over the starter yeast. As far as we know, this is the first work aiming the utilization of these antimicrobials in the fermentation for production of fuel ethanol. (AU)
