Abstract

The emergence of a new global food system and its increasing domination by processed and ultra-processed food products is associated with obesity and related diseases. Supermarkets are vehicles of transnational companies of ultra-processed products, and pricing is one of the main tools to influence the choices which the consumer can make in respect of what and where to purchase food. However, there are few evidences about how food purchasing sites and price can influence the consumption patterns of these foods. Objective: To evaluate the impact of supermarkets on availability and price of processed and ultra-processed products consumed in Brazil. Methods: Data were collected from the Brazilian Household Budget Survey conducted by the IBGE in 2008-2009 from a nationally representative sample of 55,970 households. Information regarding the records of purchases of food and beverages for household consumption made in supermarkets for 12 months will be analyzed according to regional and socio-economic strata. The total amount purchased of each item will be converted into energy (kcal) with the use of food composition tables. The definition of groups will be based on the classification constructed according to the extent and purpose of food processing. Information about availability and price of foods by site of the acquisition will be described. The impact of supermarket on purchases of processed and ultra-processed products will be studied using linear regression models. To analyze the influence of the price of processed and ultra-processed products on purchases made in supermarket, a multiple regression analysis to estimate price elasticity coefficients will be employed.
