Abstract

Mycotoxins are toxic substances produced by the secondary metabolism of several species of filamentous fungi that contaminate food before and after processing, creating a serious problem for public health and food quality. Exposure to mycotoxins occurs predominantly through ingestion of contaminated food, especially cereals and derivatives such as corn, wheat, peanuts and sorghum, among others. Fumonisins are one of the main types of global occurrence of mycotoxins, but with great frequency in Brazil. Considering the importance of studies on the applicability of biomarkers of human exposure to fumonisin B1 (FB1), the project aims to assess the exposure of humans to FB1 in food, knowing the concentration of the toxin in the diet, by analyzing different biomarkers present in samples of blood, urine and hair. For this, the samples were performed in a population group established in a university campus of USP. In addition, it was selected a group of Santa Catarina volunteers who have frequent corn derivatives consumption. Concentrations were determined FB1 and folic acid in maize, wheat and derivatives consumed by individuals as well as FB1 and sphinganine/sphingosine ratio in blood and urine. Still were determined folic acid concentrations in serum and FB1 of individuals selected in hair samples. The data were correlated among the investigated variables in serum, urine and hair and the concentration of FB1 and folic acid in food consumed by individuals. Thus, the change order or the title is being made due to the new group included in the work assessed by high consumption of corn derivatives, allowing you to compare data biomarkers of exposure and assess the risk of exposure to a larger population universe.
