Abstract

Despite the decline in dental caries be observed in developed countries and developing, the disease appears to be still prevalent, and assigned to diet by many authors, including the frequency of intake of sugar (sucrose). The Food Frequency Questionnaire (FFQ) is recognized as a useful tool in epidemiological studies, by is practical, informative, efficient and affordable, replacing the measuring of food intake of one or several days to global intake information related to a period of time. However, for ensure reliability and accuracy of data obtained through these questionnaires is essential that the instruments are carefully designed and tested to estimate errors of measurement, main source of bias in epidemiological studies. Thus will conducted an observational study. A purposive sample will composed of adolescents aged 12 to 14 years old in 2011 that live in the city of Piracicaba, according to the distribution of sucrose consumption.The volunteers will be identified according to tertiles of intake of sucrose and will answer to three dietary recalls (24 hours) and a questionnaire about the frequency and intake of 8 food items that has sucrose. Biofilm will be further collected for analysis of calcium, inorganic phosphorus, fluorine and extracellular polysaccharides insoluble. The saliva too will be collected for analysis of salivary sucrase, which express biochemical markers that can operate as a reference method for investigating the results of ingestion of sugar (sucrose) food obtained by indirect observation. Thus, the present study aims to assess the relative validity of a range of eight food items to measure frequency of intake of sucrose.
