Abstract

According to Brazilian law, beer is a carbonated beverage made with malted barley, hops and water by the action of yeast. Part of malt can be replaced by adjuncts, which can be cereal, or carbohydrates of plant origin. The utilization of special adjuncts to obtain beers can give them some different flavors, or give them more than another option for consumers who desire to try different products. These beers differ significantly in terms of character, individuality and creativity of manufacturer who, in many cases, comes to use no common adjuncts. Brewering with special adjuncts have become a cheaper solution to obtain beer due to replacement of part of the malt, giving to beer sensorial characters. Sugar cane is favorable raw material to the alcoholic fermentation because it has carbohydrates and micronutrients, thus, it can be used as a malt adjunct. Fermentation studies with this kind of adjunct, in the form of broth or molasses, will be held at the Pilot Plant Beverage EEL- USP and from there, it will be made physic-chemical, microbiological and sensorial analysis in different proportions of adjuncts.
