Abstract

The esterification of the maltodextrin has been studied along two years of the doctoral project and it was possible to observe by HPLC the little production of the maltodextrin ester. The collaboration with the research group coordinated by professor Patrick Adlercreutz from the Department of Biotechnology at Lund University will improve the knowledge of this specific reaction. His experience in enzymatic acrylation based on insight of the influence of the immobilized lipase, concentration of acrylic acid and choice of solvents will help to identify the mechanism of this esterification. Besides that, the analysis of products by NMR and mass spectrometry will confirm the ester production and also the identification of which hydroxyl of the glucose moieties from several maltooligosaccharides (DP 4 until 11).
