The goal of this scientific initiation project is to verify of not the occurrence of intermolecular copigmentation between betalains and phenolic acids or their analogs bearing amine moieties. Two model betalains shall be used: betanin and indicaxanthin. Betanin is a glycosylated red betacyanin that can be obtained from beetroot juice; indicaxanthin is a yellow betaxanthin prepared using betanin as starting material. Both compounds have been extensively investigated in our group. The absorption and fluorescence emission of these betalains in the presence of different concentrations of copigment will be investigated by varying the medium pH and ionic strength.
