Abstract

The uvaia and the cherry of the Rio Grande are pertaining plants to the Brazilian flora of the Myrtaceae family; these two species of plants produce fruits edible. The present work has as objective to analyze the ideal dose of radiation, of the microbiological point of view, for the control of total coliform and 45° and Salmonella sp, for quality of the pulp of these fruits. The fruits will be selected and sanitized. The pulps will be extracted and later conditioned in polyethylene packing and radiated in irradiator with 0,0; 2,0; 4,0 and 6,0 kGy. The samples will be analyzed to the 1, 15, 30, 45, 60, 75 and 90 days. Microbiological analyses of total; coliform and 45ºC; Salmonella sp; lactic bacteria; mould and leavenings; and mould resistant to high temperature. (AU)
