Abstract

The food industry uses different procedures, both physical and chemical, to ensure the safety of its products. Besides these methods, the use of lactic acid bacteria (LAB), or its metabolites, to inhibit pathogenic microorganisms, also called biopreservation, represents an alternative for this industry. It is possible that the bacteriocins produced by LAB are naturally present in many foods, indicating its low toxicity and encouraging the biopreservation studies. As a consequence, there is great interest in the economically viable production of bacteriocins with potential use in the food industry and whey can be an interesting source to obtain it. whey substrate is a cheap and plentiful, they could be used. The objective of this study is to determine the variability of bacteriocin production by lactic acid bacteria culture collection of our laboratory using whey at different concentrations and temperatures.
