Abstract

Mastitis in cattle is one of the diseases that generate the most economic damage to the milk production chain due to reduced production, milk disposal, premature slaughter, costs with veterinary treatment, and changes in milk quality. The study of microbial communities is in evidence and, currently, molecular methods have allowed a greater understanding of them. Staphylococcus spp and Escherichia coli are prevalent microorganisms as a cause of mastitis. Milk also contains lactic acid bacteria that can produce bacteriocins, having technological importance. The aim of this study is to verify the bacterial diversity of milk from healthy cows with clinical and subclinical mastitis through the sequencing of a new generation of the 16S gene; isolate and characterize lactic acid bacteria and evaluate the relationship between raw milk microbiota and milk quality in different regions of the country. Milk samples from healthy cows with subclinical and clinical mastitis will be collected from herds in milk-producing states in all regions of Brazil (South, Southeast, Midwest, North and Northeast). The milk samples will be subjected to extraction of the total DNA of the milk to carry out the sequencing of the new generation of the 16S rDNA gene to identify the microbiota. In addition, lactic acid bacteria will be isolated to characterize them. For lactic acid bacteria, the ability to produce bacteriocins and their action against Staphylococcus aureus and Escherichia coli will be evaluated.
