The effect of biofortified food consumption in the nutritional status of iron and vitamin A in pre-school children

Abstract

The association between elevated serum ferritin concentration and iron overload in insulin resistance has been discussed in scientific literature. Iron overload, by its pro-oxidant effect, contributes to the development of some systemic diseases. Recent studies suggest that oxidative stress caused by iron overload can cause injury in pancreatic ²-cells, reducing the production and secretion of insulin, contributing to the development of type 2 diabetes mellitus. Objective: To investigate the association between iron status and insulin resistance in adults and elderly in São Paulo. Method: Cross-sectional population-based survey ISA-Capital 2014 which will evaluated 629 adults and elderly living in the urban area of São Paulo, Brazil. Sociodemographic, lifestyle and family history of morbidity data were obtained by applying a structured questionnaire. Anthropometric measurements (weight, height and waist circumference) and blood pressure were collected and two 24-hour recall were applied for the estimation of usual dietary intake. The biomarkers of iron status (serum ferritin, transferrin, haemogram) will be assessed and insulin resistance will be estimated by the homeostasis model assessment of insulin resistance (HOMA-IR). The association between the iron status and insulin resistance is evaluated by structural equation model. (AU)
