Abstract

The use products derived from the agricultural have an important social, environmental and economic effects due to a great Brazilian biodiversity. The fruit of cambucizeiro (Campomanesia phaea), object of this study, have great potential for market application due to their active ingredients from Atlantic forest. These ingredients have important nutritional, exotic and interesting aromatic properties. Thus the proposed work has as main objective the study of the microbiological aspects of pulp cambuci, ensuring food security for consumer and its proper use in industry. Analyzes will be undertaken in accordance with the standards required by regulatory agencies: RDC no12 of the Agência Nacional de Vigilância Sanitária (Anvisa) e Ministério da Agricultura Pecuária e do Abastecimento (MAPA), through Normative Instruction No 1 for the pulp cambuci before and after subjected to refrigeration, freezing, freeze drying and pasteurization (refrigerated and frozen) treatments.
