Abstract

The goal of this study is to evaluate the influence of sexual condition on performance of quantitative and qualitative characteristics of meat from feedlot crossbred cattle Angus x Nellore. Study groups will be divided on bulls, surgically castrated, immunocastrated and females. A total of 454 animals will be divided into three lots confined and assigned to four treatments, animals used will have an average of initial weight of 265 kg and a mean age of 20 months. The animals were fed ad libitum high-grain diet containing 80% concentrate. Diets will consist of different concentrates such as corn germ, corn grain, fat pie, sunflower meal and soybean meal. At the end of the experimental period (170 days), 160 animals will be slaughtered, based on its performance characteristics. Carcass yield will be calculated, pH and temperature of the carcass 24 hours after slaughter will evaluated. During the fabrication we will perform loin eye area, subcutaneous fat thickness at the 12th rib and marbling grade. Samples will be collected from the Longissimus dorsi muscle to perform analyzes of color, cooking loss, tenderness, fatty acid profile and a content of ether extract. (AU)
