Abstract

This work proposes the development of a potentiometric biosensor for determining the amount of bioactive compounds, total polyphenols, present in honey. The sensor should be based on enzyme polyphenol oxidase (PPO) extracted of the banana naine and immobilized on a transducer based on graphite/epoxy. (AU)
