Abstract

Fish are one of the most important protein sources of animal origin for human consumption, with high digestibility and satisfactory levels of unsaturated fats, vitamins and minerals. Currently restaurants specializing in Japanese food have become common in Brazil and the concern with the introduction of culinary habits involved in the spread of parasitic diseases transmitted by fish is present. Among these diseases, there is the anisakiasis, which can occur through ingestion of meat of fish raw or inadequately treated containing the third or fourth stage larvae. These parasites can cause a series of pathological effects in man. The objectives of this project are: Make an epidemiological study of nematode larvae of zoonotic importance, collected in muscles, stomach, intestine and mesentery of Pomatomus saltatrix, Scomber japonicus and Mugil liza marketed in different establishments in the city of Bauru, São Paulo, checking the different sites of infection in their hosts and their prevalence, abundance and intensity. These species were selected since they are widely used raw in the preparation of sushi and sashimi. DNA extraction of nematodes found anisakid and storage of samples for future specific identification is performed. The results of this study may help health officials and veterinarians to pay attention to better control the marketing of fish. (AU)
