Abstract

In developing countries, the consumption of animal products could double by 2030 due to the low current consumption (FAO, 2015). Global demand for meat is growing due to population growth, the increase in per capita income and urbanization. Thus, the optimization of production and quality of meat, with features desired by the market as adequate amount of fat, tenderness, flavor of the meat and proper coloring, make up the main objectives of the production chain of beef. Supplementation of grazing in Animas in the phase of growing and termination of confined animals associated with racial best choice is a tool to improve efficiency and quality of meat. Thus, this project is necessary to evaluate the interactions between the processes that contribute to animal growth and that will impact on the quality of beef cattle from different genetic groups submitted to two dietary plans: re-creates in pasture, supplemented or not, during the rainy season; and feedlot finishing in the dry season. To do so, will run a test with three groups cattle: Nellore, ½ Angus x ½ Nellore and ½ Senepol x ½ Nellore, previously submitted to two dietary plans: re-creates in pasture (mineral salt and additive at 0.03% of body weight or supplementation concentrate 0.3% of body weight); feedlot finishing receiving high concentrate diet.
